Yummie, yummie, yummie!!!! I love Dolmades, but was afraid to make them myself because I thought it was too hard. Now with this video you have really convinced me I should make them myself. I will very soon! Thanks so much for this fun and interesting video.

Another nice, authentic, un-bastardized recipe. Impressive!
I think the grape leaves on the bottom are just to offer a layer of protection should the pan get a bit too dry — like the layer of grape leaves one puts over yemista (stuffed tomatoes, etc.) in the oven (good use for the ripped ones). After all, dolmades can rip open if handled too roughly.
A version I particularly like has quite a bit of VERY finely chopped celery, and mostly dill. Yum!
